This Vegan Sopas is my take on a Filipino Style Macaroni Soup. My mom would always make a big comforting batch of Sopas for all of us to share and what I really loved about it was the silky broth, crunch and sweetness from the cabbage, and the slices of hotdog or sausages. This vegan version uses plant-based sausages and diced ham instead of the chicken. I also added some carrot and bell pepper along with the cabbage for this Sopas.
These smashed potatoes with a delicious dill mayo is great as a starter, side, or as a snack. Baby potatoes are boiled until fork tender before being coated in olive oil, paprika, and some salt, smashed and then baked until golden brown and crisp. These are paired with a herby and tangy creamy dill mayo that’ll leave you coming back for more.

One of my favourite dishes to make because I can enjoy these wrapped in lettuce with bún (rice vermicelli), pickled veg, and fresh herbs or make a noodle bowl. 🌝 I dipped these into my homemade vegan ‘fish; sauce, inspired by Vietnamese dipping sauce or nuoc cham. I really love the balance with the rich hearty bite from the spring rolls and the refreshing veg and herbs. 🌿
“Beef” Bulgogi Bowls—inspired by and a fusion of my love for both Bibimbap and Korean bulgogi. Bulgogi is usually made of thin slices of beef but for this vegan version (that’s actually really easy to put together!) I used plant-based ground meat. I basically cooked down the plant based meat in the homemade bulgogi sauce before serving it over rice with some kimchi, sautéed carrots, cucumber, sesame oil, and sesame seeds (kind of like a Bibimbap!).
