Every year I think I have it all planned out to have a large amount of tomatoes ripe at the same time for a giant batch of sauce, but it never works out that way. There is always something that pops up that prevents that from happening and then I have ripe tomatoes trickling in all summer and fall. I started freezing them because then ice they are all done I can do one big batch of sauce! The first year I didn’t core them before freezing and severely regretted it 🤦🏼‍♀️ Once the tomatoes are frozen then thawed they get very mushy and hard to deal with. Coring ahead of time if definitely the way to go! I freeze them in large zip locks or you can use vacuum seal bags. If vacuum sealing, let them freeze first then seal. Pinching means removing the central growing tip to encourage lateral growth on your plants. Doing this results in more stems which means more flowers! Woo hoo! Your stems will also be longer and much thinner which is perfect for floristry too. We walk around with a bucket and gently remove the tips with our fingers being careful not to transfer sap from one plant to another. You can use snips too, however you will need to clean them in between your plants. Transferring sap from one plant to another can transfer potential disease and virus. In a week or so you will notice the lateral stems growing on your plant, its so awesome to see and means you can get ready to enjoy more flowers. Didn’t know about pinching or forgot to do it this season? No stress! It’s not too late depending on where you live and how tall your plants are. You will set back your flowers a few weeks if you choose to do it now otherwise you can enjoy them this year and make a note to pinch next season.
