Roasted Garlic Parmesan Potatoes:3 lbs Yukon Gold potatoes (chunks) 3 Tbsp olive oil,1 Tbsp white vinegar,4 garlic cloves, minced,1 Tbsp kosher salt,1 tsp pepper, 5 oz grated Parmesan cheese,2 Tbsp chopped parsley.In bowl, whisk olive oil,vinegar,garlic,salt,pepper.Toss potatoes til coated.Roast in 425 oven 35-40 minutes, turning once.Remove from oven.Sprinkle cheese over potatoes,stir to coat.Place potatoes back in oven 10-15 mins,til cheese is crisp.Sprinkle with parsley,serve immediately.
