Homemade Banana Walnut Bread (modified from recipe from Food Network) Ingredients: 1-1/4 cup flour 1 tsp baking powder 1/2 tsp salt 1 cup brown sugar 1 stick butter room temperature; extra butter for loaf pan 2 room temperature eggs 2 capfuls of Appleton Rum 1 tsp vanilla extract 1 cup toasted walnut pieces Directions: Preheat oven to 350 degrees; Sift flour, baking powder, and salt into bowl and set aside; Whisk eggs, vanilla extract, and rum in separate bowl and set aside; Toast walnuts on sheet of aluminum foil in toaster oven until just toasted, then cover with another piece of foil and crush with rolling pin; set aside; Mash bananas with fork in a separate bowl and set aside; Cream butter and sugar in stand mixer until smooth, slowly add in egg mixture until blended, then slowly add in bananas and mix until blended; Detach bowl from stand mixer and incorporate flour mixture until blended, then add half of the crushed toasted walnuts; Pour batter into greased loaf pan and sprinkle the rest of the crushed walnuts on top of the batter; Bake loaf for 50 minutes or until knife placed in center of loaf comes out clean.
