SPOILER ALERT: It's not actually chicken. UPDATE: Made this. Husband and I both quite liked it! Next time I'd probably make more cashew butter because it was still quite tomatoey. (ALSO: Her method of using an immersion blender did not work for me. It splattered everywhere, so I added more liquid, but it still didn't get the cashews very smooth so I had to switch to a food processor.) I used fresh chickpeas which, for this recipe, I'm not sure were worth the extra effort.

Ratatouille recipe ~ 28 oz can whole peeled tomatoes, EVOO, 1 large eggplant (1 lb), peeled & cut into 1-inch cubes; 2 large yellow onions, diced; 1 head garlic, cloves smashed & peeled; 2 bell peppers, diced; 2 large zucchini (1 pound total), diced large; 1 bay leaf; 1 Tbsp fresh marjoram or oregano leaves; 2 to 3 Tbsp red-wine vinegar; salt & pepper to taste  #vegetable
