Slow Cooker Beef and Barley Soup-it was pretty simple, and it was nice to wake up to a finished product. Note-I only had quick cooking barley, so I put that in about 30 minutes before we were ready to eat.
Mushroom Barley Soup, easy to make it vegan - sub veg for beef broth. I doubled the recipe and added chopped carrots w/ the garlic, some chopped spinach at the end, and left out the salt/miso (subbed 1 tsp Williams Sonoma mushroom soup boullion).
