Mix one small can of white tuna w/ 2 tbls. cottage cheese, a splash of balsamic vinegar, and 1/4 of a diced avocado. Place thinly sliced mozzarella on each side of one whole wheat sandwich thin, add tuna mix to open faced bread and place in oven on broil until cheese is melted and tuna is warm. Top with crumbled feta, tomatoes, or whatever you desire. Super delicious!

Ohyeaah, gotta love 12 hour school days  Since I'm here forever today, I did a bunch of meal prep! Lightly steamed carrots and broccoli with tofu and hummus, homemade coconut banana bread muffins, boiled eggs with sweet potato and spinach and cabbage, an apple, almonds and corn pops (because I'm five years old and love them), and of course the best @Quest Nutrition bar everrrrr Okay off to my next class, wooo. #Padgram
