Cinnamon Sugar Donuts - fluffy baked donuts coated with cinnamon sugar. You need to try these!

Zimtschnecken: 1 pack yeast (9 g) in warm ½ c H2O (118 ml), ¼ c milk (59ml) & 1t sugar. When foamy (~5 min), sprinkle 1t flour. Wet: 4T butter (30g) soft, 2 eggs. Dry: 4c wheat flour (500g) (or 3C wheat flour, 1C hazelnut flour), ¼C sugar (56g). Mix all first with a spoon, then knead. Form a ball, smear oil on ball surface, cover w cloth, let rise 1h on the warm counter & optional overnight plastc-covered in fridge. Fill: ¼ c brown sugar, ¼ c (½ stick) butter (56 g), 2T cinnamon, 1t vanilla.
