Ramps are high in vitamins A and E. Ramps have a wealth of minerals. Manganese, iron and chromium. They can boost the immune system, can lower bad cholesterol, and fight cancer. Similar nutritional benefits as leeks, onion and garlic. A short lived springtime green foraged from the wild. Lucky for me, they grow abundantly in West Virginia. Can't wait for spring!!
