(While baking the first batch, return the dough to the fridge to chill it so dough doesnt stick to the rolling pin.  Allow cookie sheet to cool before reusing.)

VEGAN DOUBLE-CRUSTED SPICED APPLE PIE: 23 cm glass pie plate, greased, 1 Large-Batch All-Purpose Vegan Pastry Dough, chilled (see recipe). Ingredients: 6 large Granny Smith apples (thinly sliced), 1 C (250 mL) granulated sugar, 1⁄4 C (50 mL) flour, 1 tsp (5 mL) ground cinnamon, 1 tsp (5 mL) ground nutmeg, 1⁄2 tsp (2 mL) ground allspice. Brush top with soy milk & sugar for top. Cook 220C for 25mins, reduce to 180C for 50-60mins - or pre-bake dough & cook less time at 180C until top browns.
