These mini beef wellington bites with Dijon sauce are one of my favorite appetizers for a party! With center-cut beef tenderloin, mushroom duxelles, puff pastry, and prosciutto, these individual bites are flavorful, easy to make, and a huge crowd-pleaser. You can even make without mushrooms - use shallots, zucchini, or eggplant instead. This appetizer is elegant, classy, and fancy enough for happy hour at home. This is one of the best finger foods for parties, Christmas, Easter, and more!
