I was looking for a healthier Gluten Free Pancake.  They were pretty tasty, I think I will adjust the recipe a bit and add some Gluten Free Oats.  They were pretty good though, my littlest one was asking for more!

High protein, low carb pancakes that are light, fluffy and delicious? The Fountain Avenue Kitchen 6 eggs 1 cups cottage cheese teaspoon kosher or sea salt cup flour (see comments above regarding gluten-free options) teaspoon baking soda

Low carb pancakes: 1 C almond meal, 3 eggs, 1/8 tsp vanilla, 1/8 tsp cinnamon.  Mix and pour into buttered or greased skillet.  Cook, flip, cook.  Done.  :)  Keep them on the small side if having trouble sticking together.  Voila!
