I got the tower pancake molds from Williams-Sonoma. I used the pancake recipe that came on the box. It was buttermilk heavy, but really good! My husband topped his with whipped cream, maple syrup, and fresh berries.
Another make your own pizza night in our house. I love fresh mozzarella on pizza as opposed to shredded. It just does something magical. I also love the Jamie Oliver pizza dough recipe I found. The touch of cornmeal (I use polenta) really rounds out the flavor and texture of the crust. Now if I only had a bread oven...
Yowser! This was from a make your own nachos night! We don't often suffer too much, food-wise, here in the Fink-Davis household! I made refried beans with El Pato sauce (I love that stuff), some homemade nacho cheese sauce, fresh salsa, fresh guacamole, ground beef with taco seasoning, and some good sour cream and let everyone create their own plate of delicious nachos. I prefer Tostitos natural, organic tortilla chips.
The same teatime tray as before. Cantaloup, fresh figs with mascarpone, prosciutto, preserved black walnuts, soppressata, imported cheese, cream cheese, mini Caprese salads on toothpicks, pepper toast, and roast beef on toast.
Delicious! A fresh summer salad with sweet corn I cut off the cob and cooked, summer tomatoes, avocado, tons of fresh basil and dill, green onions, salt, pepper, vinegar, and olive oil. I served it with four cheese creamy garlic spaghetti squash and grilled chicken breast.
Delicious herbed up salmon. I baked it with sliced onion and lemon, fresh oregano, rosemary, and thyme, then drizzled with olive oil and a sprinkling of salt and pepper. The onions, lemon, and herbs really permeate the salmon.
One of my favorite ways to enjoy potatoes. First they are parboiled, then they finish cooking by being sautéed in the fat leftover from frying bacon. Add some crushed garlic, salt, and the previously fried bacon (which has been crumbled) and top with chopped fresh parsley.
