Last night’s bruschetta action. I love summer. So many great fresh foods to enjoy. ❤️☀️ Happy Sunday, everyone!!
Bruschetta! It's a new summertime favorite for me. I can't think of a better use for fresh summer tomatoes and basil than to throw them on some crispy bread and dig in.
Another simple summer delicacy. Homemade bruschetta. So easy, so tasty. I love it!
Nummies! Rosemary pork chop, steamed broccoli with butter, salad, sautéed mushrooms, and crispy potato slices with sour cream, bacon, and green onion.
Mini pecan pies. I love making mini pies and cookies. They're great for tea time.
We had our first (unexpected) snow here in northeast Nebraska on November 11. I made hot chocolate so we could enjoy the first snowfall. We are all settling in for the less active time of winter while all our friends in the Southern Hemisphere are ramping up to summer days. ☃
Part of tonight's supper. A creamy garlic and spinach stuffed portobello mushroom cap topped with crispy bacon and Parmesan cheese all ready for the oven.
I loved this gorgeous salad! Green onions, radishes, avocado, mushrooms, cabbage, tomato, celery, beets, basil, flat leaf parsley, dressed with extra virgin olive oil, apple cider vinegar, lemon juice, sea salt, and pepper. Yum!!
I'm trying to go lower carb. Trying. This was a success. I used one of those handy flip lid chopper things to dice up: yellow, orange, and green peppers, zucchini, mushrooms, onion, and I cut carrots and garlic by hand. It's my breakfast mix. From this I can make omelets, frittatas, or just eggs with sautéed veggies on the side.
