Kind of a great quick and easy accidental breakfast. I had some leftover fries from a lunch out. I heated them in a frying pan until they were hot and crispy again then topped them with fried eggs, some grated cheddar, and fresh diced tomatoes.
I know there is a potato on my plate, but my day was still under 60g of carbs, so I was happy. I always eat more carbs one day a week. We had blooming potatoes, steak with chimichurri, salad, and sautéed whole mushrooms. Yummy!
Yowser! This was from a make your own nachos night! We don't often suffer too much, food-wise, here in the Fink-Davis household! I made refried beans with El Pato sauce (I love that stuff), some homemade nacho cheese sauce, fresh salsa, fresh guacamole, ground beef with taco seasoning, and some good sour cream and let everyone create their own plate of delicious nachos. I prefer Tostitos natural, organic tortilla chips.

A very pretty caprese salad I made with some Kumato tomatoes I found at my local grocery store. Fresh mozzarella, fresh basil, organic extra virgin olive oil, and some Australian flake salt finished everything off.
