While you can plant your potatoes directly in the ground after taking them out of storage, another technique is to place them in direct sunlight for a few days before planting. This will cause the potato to quickly break dormancy and immediately begin producing dark green spouts and leaves. This process is called chitting. In short season areas this is a great way to jump-start the growth of your potatoes.
