Surr karripastaen med litt olje i en romslig kjele.  Tilsett sitrongresset, limeblad og aubergine.  Hell i kokosmelken og fiskebuljongen.  Sett ned varmen, legg på et lokk og la det koke i 10 minutter.  Tilsett resten av grønnsakene og kok i ca. 5 minutter.  Smak til med salt.  Legg i laksebitene og la de trekke i 2 – 3 minutter.  Strø over basilikum eller koriander og server med kokt ris.
