Quinoa Tabouli- such a GREAT salad! Fast, easy and full of flavor. I was worried about the Quinoa being a bit too transparent and not having enough crunch compared to traditional Tabouli - but that was not the case at all. This is a salad you can whip up fast for a big crowd. Lasts in fridge about 4 to 5 days - so great for left overs and work lunch. Remember to use Italian Flat Leaf Parsley or the flavor will not be what you think it should be.
