Ingredients: • 8 large eggs • 1/4 cup water • 1 bell pepper, diced • 1 small red onion, diced • 2 cups spinach or kale, thinly sliced • 1 cup shredded cheese (dairy free works too) •1/2 tsp each of salt, basil, oregano + pepper Directions: • 1️⃣ Add the diced veggies into the muffin tin, followed by the cheese. • 2️⃣ Whisk together the eggs + water.
