If you can eat dairy, substituting whey for water always makes the best bread. I made fresh ricotta with milk and buttermilk yesterday, then used the whey in the overnight no-knead recipe from the cookbook with a mix of all-purpose and whole grain einkorn flour. Whey works wonders with gluten free bread too. #einkorncommunity
My first sourdough einkorn pandoro, it's delicious. A traditiional 17th century Christmas bread from Verona, it's served dusted with powdered sugar before serving. The whole process takes 48 hours. I'll keep working on this and hopefully share the recipe in time for the holidays. #einkorncommunity
