Pheasant are common in southern Sweden. They can be tender and delicious, especially if braised, and I find their gamey flavour more interesting than chicken. In Sweden they are particularly popular in the autumn when they are cooked with apples, an ideal partner for pheasant. This is, without doubt, my favourite pheasant recipe.
