Back to Saturday Night Shenanigans! this time it's Coconut Shrimp Curry - the easiest recipe to follow, and such a concoction of flavors! I did increase the curry powder amount to 1 1/2 tsp to give it more kick. All else was amazing! I think it's healthy too? I mean, we just added coconut milk, and the rest were veggies and shrimp, and of course, we enjoyed it on top of a bed of cauliflower rice (we are big fans!).
