Quick and easy dinner or light snack with chips!  I made a small batch using about 25 shrimp, boil in water for 2-3 minutes.    Dice those veggies 1 cucumber 1 onion (red or white i used white because I didnt have red)  Cilantro to taste 2 tomatoes One avocado  2/3 jalapenos (seeds in leaves extra spice! Personal choice, i like it spicy!)  Cut poached shrimp into quarter inch pieces and mix in with diced veggies. Add in your lemon lime juice mixture - put a pinch of like zest for added flavor😊
