The Best Pulled Pork Sandwiches with Garlic Aioli

Let's talk about sandwiches. I love sandwiches. My body would prefer it if I ordered a salad once in a while, but the truth of the matter is, I just love sandwiches. My favorite; pulled pork. However, if you have ever worked in the restaurant industry, you know that you are taking a risk when ordering a pulled pork sandwich. Why? Because it is usually pork that is getting close to being tossed. So, they throw extra barbecue sauce on it and slap a 'chef's special' on it. Scary, but accurate. I have been working very hard at perfecting my pulled pork sandwich recipe, and now that I have it down to a science I whipped up a homemade garlic aioli sauce that takes this pulled pork sandwich to the next level. If you are thinking to yourself, Ahh, crap. I can't do this! My family shrieks in horror when I tell them I am making pork tenderloin for dinner! Fear, no more. Your family most likely grabs fast-food before coming home on 'pork tenderloin night' is because you are overcooking it. They don't like to eat sawdust. Sorry, not sorry. I was sifting through recipes on Pinterest to see how long everyone else recommends cooking pork tenderloin, and it is absolutely insane. About 95% of them were suggesting that you prepare an average-sized pork tenderloin for 35-55 minutes. Yikes! When it comes to pork tenderloin, you want it to be tender. You don't want tough, hard-to-cut meat. And you certainly don't want the pork tasting like sawdust. Pork is not like chicken, it does not have to be cooked all the way through for it to be safe to eat. Plus, if you allow pork to rest after cooking it, it will continue to cook. I ask you to take a leap of faith and join me on how to prepare a pork tenderloin that everyone will love. Everyone will love it? Damn, straight. When Peyton turned three, I made about 15lbs of pulled pork for sandwiches for his birthday party. I made all of it in the Instant Pot (not at one time, haha). It was gobbled all up! If you don't have an Instant Pot yet, I highly recommend one. They are a total game-changer. I have the 8qt. Instant Pot, and it has met all of my needs. Real quick, I am going to discuss aioli. What the heck is it? It is a boujee term for mayonnaise. Yup, that's it. But, somehow, it takes ordinary sandwiches and makes them amazing. This garlic aioli on the pulled pork sandwich recipe really pulls it together and makes you think you are eating at a fun, new brewery or over-priced American restaurant. MY HELPFUL TIPS & TRICKS I thaw my pork tenderloin at least partially; that way, the seasonings stick onto it. Hate thawing your pork tenderloin in the microwave? I found that if I thaw my pork tenderloin on the 'fish' setting, it doesn't cook the outer layer. Give it a try! I did not provide a measurement for the barbecue sauce because we are all different! If you like your sandwiches really saucy, then, by all means, pour it on! If you like it lightly sauced, then drizzle it on. I don't like dirty dishes. So, with that said, I don't actually measure the honey into a measuring spoon, and neither should you. Just drizzle it onto the pork tenderloin until your heart is content. I do recommend that at least around 3 tablespoons, though! For the garlic aioli, I am not sure when I used regular mayo last. I only use Hellman's Olive Oil Mayonnaise. If you are a Miracle Whip family, I suggest you purchase some mayo for this recipe. 100%. I prefer using Sweet Baby Ray's barbecue sauce. It's my family's favorite. PULLED PORK INGREDIENTS -2-2.5lbs of pork tenderloin -1 cup of chicken broth -3 Tbsp. of Worcestershire sauce -3 Tbsp. of honey -1/2 tsp. of garlic powder -1/2 tsp. of onion powder -1/4 tsp. of black pepper -1/4 tsp. of salt -Barbecue sauce PULLED PORK INSTRUCTIONS 1. Pour 1 cup of chicken broth in your Instant Pot 2. Sprinkle garlic powder, onion powder, black pepper, and salt on both sides of the pork tenderloin. 3. Place the pork tenderloin on the trivet in the Instant Pot. 4. Slowly drizzle the Worcestershire sauce over the pork tenderloin. Don't do it too fast as it will all quickly spill off into the chicken broth. 5. Add honey onto the pork tenderloin. 6. Set your Instant Pot valve to sealing. Select Manual, high pressure, and set the timer to 8 minutes for fresh pork (13 minutes for partially frozen, or 16 minutes for frozen pork). This will give you medium-well pork. If you prefer rare pork, you will want to set it for 3-5 minutes for fresh pork. 7. When the cook time is done, let your Instant Pot do a natural release for 10 minutes. 8. Remove the pork tenderloin and allow it to rest for 5 minutes. Then shred it up. And then add your favorite barbecue sauce! GARLIC AIOLI INGREDIENTS -3/4 cup of mayonnaise -1 Tbsp. of dried chives -1/2 Tbsp. of lemon juice -1/2 tsp. of minced garlic -1/2 tsp. of white sugar -2 pinches of black pepper -2 pinches of salt GARLIC AIOLI INSTRUCTIONS 1. Combine all ingredients and mix! 2. Top your buns or bowl of pulled pork & enjoy! 3.
