~Salad in a Jar~ these salads can be made up to 4 days in advance and will stay fresh in the fridge with a lid on. This is one of my tricks to eating salad everyday for lunch. I make a few jars on Sunday night. When you’re ready to eat, just shake it up.

Pink Mojito

A girly drink, Barbie Doll-icious: oz Knob Creek - 1 oz Cranberry - oz Pineapple Juice - oz fresh OJ - oz fresh Lemon Juice - Ginger Ale. Combine all the ingredients except ginger ale in a shaker. Shake well and pour. Top with a splash of ginger ale.

Basil French 75 Ingredients: 5 basil leaves 1 teaspoon superfine sugar 2 ounces gin ounce lemon juice Ice 4 ounces Champagne Directions: Muddle basil leaves with sugar in a shaker. Add gin, lemon juice, and ice. Shake, and strain. Add ice and Champagne.

Midnight mojito.

Ingredients: Bunch mint leaves 12 fresh blackberries 1 tsp sugar 3 oz White Rum 1 oz lime juice club soda crushed ice In a pitcher, place the mint leaves, blackberries and sugar and muddle well. Add the rum and lime juice and stir.

Homemade Salsa. Yum!

chop: Roma tomatoes 1 small onion cup fresh cilantro mince: 2 seeded Serrano or Jalapeño peppers 1 clove of garlic add: 2 tbsp. freshly squeezed lime juice salt and peper to taste mix everything together and let sit overnight for flavors to meld.
