Whole Grain Pumpkin Spice Butternut Squash Muffins - My thoughts: I actually 1/4 this recipe, skipped the egg and made in a mini loaf pan, baked for 35-40 min and because I was in a hurry had to take out of oven even though not completely done. Still delicious! Really moist, healthy, want to make again right now!!
This is my basic breakfast muffin recipe. I make a double batch and freeze them, they warm up in the microwave perfectly. I use a regular egg and flax meal instead, and throw in anything extra I feel like... like chopped mangoes, or dried cherries, or pecans, or raisins, blueberries... whatever I have. Never make the same batch twice!!
