Husk at pinnekjøtt er saltet og tørket/speket og må vannes ut før bruk. Kjøttet får tilbake sin naturlige væskebalanse og saltmengden reduseres. Utvanningstiden varierer litt etter hvor mye kjøttet er tørket, tykkelsen på kjøttstykkene og temperatur på vannet.  Lunkent vann gir raskere utvanning.
