Gjeitost  (Norwegian goat cheese) 'brunost'  ost = cheese   / Gjei = goat / brun = brown  It's almost like caramel -- with an incredible texture, goes well on Norwegian Crackers like Kornmo kjeks - or Julebrod! I always LOVED it with a green apple, or red ... my my -- like a caramel apple in your lunch bag. mmm
