Corn Bread Taco Bake... It's like a Mexican shepherd's pie. I use ground turkey and homemade taco seasoning for the filling, along with frozen corn and a can of drained black beans. Top it will an easy homemade cornbread batter and forget the french-fried onions to make it quick, healthy, and delicious.
