Easy Chocolate Chia Seed Pudding Recipe
•2 cups cold water (or dairy-free milk) •2/3 cup chia seeds •1/2 cup cocoa powder •1/3 cup pure maple syrup (or raw honey) •1 tsp pure vanilla extract •1/2 tsp Himalayan pink salt Instructions: 1. Add all of the ingredients to a high-speed blender and blend until smooth and creamy. scrape down the sides of the blender as needed. 2. place the blended chia seed pudding in the fridge and chill for several hours, or overnight. 3. once chilled, serve and enjoy! store leftovers in the fridge for about 5 days. video credit: @thebigleybasics (TikTok)

Chickpea Tofu
Usually made with soybeans, tofu originated in China and is widely used in many traditional dishes or often as a protein replacer of meat/fish. Soybeans have an incredibly high protein content, which make them the perfect legume for tofu. But you can also extract the protein and bind it into a soft block from other protein-rich legumes, like chickpeas. The methods vary slightly, as with traditional tofu you’d introduce acidity, which, similar to cheese, makes the liquid curdle, giving you the chance to strain and press It into a firm block. With chickpeas, the protein helps to set the tofu into a soft gelatinous block, also known as Burmese tofu.

Ingredients: • one whole lemon • 3 dates • a small piece of ginger • a splash of vanilla • a dash of cinnamon • 1 tbsp olive oil • 1 tbsp local/raw honey • 1 1/2c of filtered water Blend until smooth and pour over ice. Have you tried this? I hope it is as good as it sounds!

Today we are back and we are using carrot and radish tops to make pesto. We often throw away the stems of our veggies, which is a real shame as they often have so many uses. We also share my JoesGarden tips on how to use this pesto. It is worth noting I am using fresh organic home grown veggies for this recipe, which I know are chemical free. It is worth checking your crops before using this recipe. I always recommend growing your own, but if that's not possible then organic farmers markets are a great place to buy.
