1/2 cup unsalted butter, 1/4 cup light brown sugar, 1/4 cup granulated sugar, 2 tsp vanilla extract, 1 egg, 1/4 cup applesauce, 1 cup all-purpose flour, 1 tsp baking soda, 1 tsp cinnamon, 1/4 tsp salt, 2 cups honey oat granola, 1/2 cup semi-sweet chocolate

Preheat oven to 350°F. Line a baking sheet with parchment paper. To a large bowl add butter and both sugar. Using a hand mixer, blend until creamy and combined. Add egg, applesauce and vanilla. Mix until combined. Add in flour, baking soda, cinnamon and salt. Mix to combine. Add in Honey Oat Granola and chocolate chips, using a spatula fold everything together until well combined. Scoop onto prepared baking sheet. Bake for 10-12 minutes. Allow to cool 1-2 minutes on the cookie sheet and serve.
