This recipe is the vegan version of what I call a California Chicken Salad aka Sonoma Salad the classic recipe that includes grapes, pecans, and the crunch of fresh celery. I love making this taco meat to put on top of a salad, inside of fajitas, lettuce wraps or in casseroles.Here's what you need for this recipe: 1/2 red onion 1/2-1c sundried tomatoes 1lb carrots Palmful of cherry tomatoes 1 red bell pepper 3 stalks of celery 1-2 beets 1-2c sunflower seeds or walnuts Cumin Paprika Cayenne pepper
So this was kind of amazing! Raw vegan falafels with tahini dressing. Falafel balls were made with carrots, sunflower seeds, cilantro, lime juice, scallions, cumin, coriander seeds, and covered with sesame seeds. They were wrapped in red cabbage leaves stuffed with lettuce, tomato, cilantro, & scallions, and topped with a dressing made with tahini, lime juice, water, garlic, & salt.
