South Beach Peanut Butter Cookies . . . I followed a recipe one person recommended: 1 cup natural peanut butter, 1/2 cup Splenda brown sugar, 1 tsp vanilla, 1 tsp baking powder and 1 egg. It came out beautifully. Put the rest in the freezer. Defrost when craving a treat--microwave a bit before eating it so it's warm.
